A bright, easy highball. The ginger ale’s fizz lifts DÒDÒ’s caramelised plantain sweetness, with a little warm spice at the finish. It’s light, refreshing and very easy to say yes to.

Ingredients:

• 50ml DÒDÒ plantain-infused rum

• 150ml chilled ginger ale

• Plenty of ice cubes

• Optional: 2 dashes Angostura bitters adds depth

Method:

Fill a highball glass right to the top with ice. Pour in the DÒDÒ. Top slowly with chilled ginger ale. Pour it down the inside of the glass so it keeps its fizz. Add the bitters if you’re using them, then give it one gentle stir to combine. Serve straight away.
